Pan-Asian Cuisine Takes to the Seas

Seven Seas Explorer, the soon-to-be-launched newest addition to the Regent Seven Seas Cruises stable, has unveiled its third specialty restaurant. Pacific Rim is a sophisticated pan-Asian speciality restaurant that celebrates the culinary traditions of Asia.


The restaurant is a Zen-inspired space created by leading international architecture and design firm RTKL. Guests are welcomed with a modern sculpture inspired by the Tibetan prayer wheel in the restaurant lobby, before being welcomed into a space of floor-to-ceiling partitions formed by traditional Japanese rain chains and Chinese screenes, wall coverings of crystalline matrix stone and Thai wood carvings, brushed brass latticework on the ceilings, and judicious use of muted light.


Complementing the soothing ambiance is an innovative menu that explores the best of Asia’s diverse cuisine. First courses include tempura crispy soft shell crab with green chilli aioli; caramelised cassia-braised pork belly topped with grilled diver scallops; and a seaweed and wakame salad drizzled with a black pepper soy and onion dressing. For mains, guests can choose between mouth-watering plates like tempura-battered Canadian lobster with shiso leaf, orange ponzu sauce and spicy mayo; miso-spiced black cod wrapped in hoba leaf, accompanied by pickled daikon and spicy den miso; and grilled Korean barbecued lamb chops with wok-fried beans, eryngii mushrooms and gochujang dressing.
