Michelin-starred chef Pino Lavarra is revamping the dining experience at Tosca, the Italian fine-dining eatery at The Ritz-Carlton Hong Kong, with the addition of several new initiatives.

Diners will be able to enjoy an all-new la carte menu that will be served alongside the restaurant’s signature plates and seasonal dishes. On the menu is an array of gourmet treats including Crab Cookie with Roasted Langoustine, Veal Trotter, Green Bean Purée, and Black truffle sauce, which Lavarra calls his answer to salad; and a line-caught Turbot Steak with Sautéed Seafood in Amalfitan Lemon Sauce, a dish inspired by the Amalfi coast.

Along with the new menu, Lavarra is introducing a Giro d’Italia concept, where he will showcase dishes and wines from different Italian regions each month. In April, Lavarra will take guests on a culinary journey to Toscana with dishes like Zucchini Parmigiana, Creamed Chickpeas, and Fried Anchovies; Cod Livornese Stew Sauce with Potato and Pearl Onions, Sirloin of Chianina Matured in EVO, Tomato and Bread Terrine, and Cannellini Beans; and Chestnut Flour Cake, Olive Oil, and Gianduja Chocolate. Other regions that will feature in the Giro d’Italia initiative include Puglia, Sardinia, Sicilia, Veneto, and Piedmont. The Giro d’Italia is available for Saturday lunchesthrough December 2015, and is priced at HK$598/US$77 (three-courses with wine) or HK$698/US$90 (four courses with wine).

Finally, to celebrate his Michelin honours, Lavarra will be offering another new dining experience called Pino’s First Table. With this, guests will be able to enjoy a four-course, limited-edition menu featuring the chef’s personal picks and served with sweeping views from window seats. Pino’s First Table will be available at 6pm from Mondays through Thursdays, and is priced at HK680 (US$87) per person. www.ritzcarlton.com
