Tokyo Sensation in Macau

Visitors to the City of Dreams Macau will soon be able to indulge in an authentic Omakase experience delivered by a team of seasoned Japanese sushi chefs trained by master Shinji Kanesaka, when Shinji by Kanesaka opens next month. The first venue of the famed Tokyo brand in Greater China, Shinji by Kanesaka will offer the master chef a new opportunity to peruse culinary perfection, using only the finest and freshest ingredients to craft the most exquisite Japanese fine-dining experience in Omakase style.


Born in Chiba Prefecture in 1972, the sushi maestro opened his first restaurant Sushi Kanesaka in the prime Ginza district of the capital of Japan at the tender age of 28. The restaurant is considered a temple of sushi by his legion of fans and has been on the Michelin star award list since 2008.


Helming the kitchen of Shinji by Kanesaka at City of Dreams Macau are Chef de Cuisine Toru Osumi and Senior Sous Chef Kenichi Fujimoto, both of whom have been trained by master Kanesaka. Both chefs have also inherited Master Kanesaka's craftsmanship – hand-making sushi of traditional Edomae style from the freshest fish, rice, and wasabi with artistic techniques. Fish and seafood supplies will be personally selected by Master Kanesaka in the world-renowned Tsukiji Market and flown out directly to Macau four times a week.
