A Sweet Touch



An exclusive pop-up by Pierre Hermé Paris opens this week at the Ritz-Carlton Hong Kong’s Café 103, giving sweet toothed travellers a chance to indulge in a special afternoon tea selection featuring pastry creations from Pierre Hermé's Fetish Infiniment Citron collection. The Fetish Infiniment Citron collection is a celebration of lemon flavours, using exclusively Sicilian lemons which are juicier and more flavourful than ordinary lemons. Pierre Hermé dedicated himself to elevating the taste of lemon by analysing its different aspects: bitter, acidic, and sweetly perfumed.
 
Diners can look forward to pastries including the Chou Infiniment Citron; Pierre Hermé's cream puff creation is made of shortbread pastry, velvety lemon cream, and candied citrus. Crunchy on the outside and soft on the inside, the chou pastry is covered with a fine layer of lemon crumble before baking, which crackles under the palate.  Other must try dishes from the afternoon tea, which was created in collaboration with Brook Wong, chef de cuisine of The Ritz-Carlton Hong Kong, include mini smoked salmon sandwiches with lemon curd, a duck confit and foie gras mousse tart with candied lemon peel; and a citron egg salad, perfectly suited for the city’s hot summers.
