Seeing Red at Tosca

The humble tomato is the star attraction of the new limited-time menu at Tosca, the fine-dining Italian restaurant at The Ritz-Carlton Hong Kong. Developed by the restaurant’s Michelin-starred chef Pina Lavarra, the All About Tomato menu takes inspiration from Lavarra’s homeland of Italy in a series of tomato-heavy dishes that spanning amuse-bouches through dessert, using ten different varieties specially imported from southern Italy.

The menu begins with the ‘24-karat Gold Tomato’ amuse bouche, before guests choose one of two starters, Tomato-coated Buffalo Mozzarella with Truffle Caviar, or Cold Tomato and Strawberry Soup with Smoked Herrings. For the pasta course, there is a San Marzano Tomato Risotto with Veal Sweet Bread, or Stuffed Gnocchi with Tomato Seed Jam. The menu’s main event however, a medley of flavours and textures, is Crispy Scorpion Fish on Clear Tomato Water and Sour Neapolitan Vegetable Salad. The meal ends on a sweet note as guests are served Cheesecake with Tomato Jelly and Lemon Curd for dessert.

The All About Tomato menu will be available at Tosca between August 6 and September 30. The menu is priced at HK$1,280/US$165 (four courses), HK$1,480/US$191 (five courses), and HK$1,680/US$217 (six courses) per guest.
