Culinary Accolades at Constance

The culinary and mixology teams of Constance Hotels & Resorts have enjoyed resounding success at recent competitions across Asia Pacific. One Michelin Star Chef Masachi Ijichi from La Cachette restaurant in Valence France and Dammika Sarath from Constance Halaveli Maldives (pictured), have won the 9th edition of the Festival Culinaire Bernard Loiseau, which recently took place at Halaveli’s sister property Constance Belle Mare Plage, in Mauritius. Their winning dish consisted of a cold white cocoa beans soup, with a carrot mousse and marinated vegetables for starters, followed by spices and orange marinated duckling breast, with onions stuffed with giblets, fruits chutney and a sweet potato cromesquis.

In a separate event, three barmen from Constance Belle Mare Plage and Constance Le Prince Maurice, both in Mauritius, have taken part in the annual Cocktail Competition, where they were tasked with creating innovative cocktails using locally produced Chamarel Rhum. The jury included Laurence and Joachim Louis, representatives of Jack Daniels and Crème Chambord, who chose Ashvin Purrun from Constance Belle Mare Plage as the winner.

Also held last month, The Wine Competition is an annual challenge seeking the perfect wine match for a signature dish, created this year by Chef Eyvind Hellstrom at Constance belle Mare Plage. Sommeliers Cheryline Coulon from Constance Le Prince Maurice beat down tough competition from two other Mauritian sommeliers to win first place.

Finally, at this month’s Service & Art de la Table event, held at the at the Blue Penny Restaurant at Constance Belle Mare Plage, judges Dominique Loiseau, and Mercotte and Isabelle Mobihan named Benito Bellehumeur from Constance Belle Mare Plage the winner after he presented the most beautifully prepared table and the best service across the board.
