Degustation withA Difference

Wine glass company Riedel has collaborated with Hong Kong’s Madam Sixty Ate to create a tantalizing tasting menu with a twist. The five courseFlavour menu, available May through July, captures both the aroma and taste of this delicate degustation menu and serves each course in its complementary Riedel O wine glass instead of a traditional plate.

Famed for its wide variety of wine glasses with different characteristics designed to enhance the flavours of wine, Riedel puts its knowledge of the nose to the test, working with the Madam Sixty Ate chefs to match its stemless wine glass collectionto the aroma and taste of each course.

Highlights of the menu will include a Dungeness crab cocktail with pink grapefruit mousse, and ginger pearls; theVegetable Patch, heirloom carrots baked in coriander salt pastry, and served with cauliflower mousse, mushroom ‘soil’, andfromagefrais; andshiraz scented wagyu cheek, served with a celeriac panna-cotta, smoked bone marrow, parsnip flavours, espresso crumbs and a crisp pastry.

The Flavourdegustation dinner is available on request from Sunday to Thursday with a minimum of five days’ advanced notice. A minimum table of 6 people and maximum of 12 people are required to sample this unique menu. and
