Signature editions include a delicate chopped beef carpaccio served with anchovy cream and oregano crisps; roasted herb marinated quail with smoked tomatoes, mint, Ligurian olives and white raisins; black handkerchief pasta with cuttlefish, clams, prawn and chilli; and delectable truffled home-made ricotta ravioli, served with leeks and a unique sweet corn sauce.
